Lemon Blueberry Muffins

These days, the term “healthy” can mean just about anything. To one person, being healthy might simply mean they eat some fruits and vegetables once or maybe twice a week. To another person, it might mean a no carbs, low-fat, gluten-free, lactose-free, sugar-free diet. I like to consider myself right in the middle of the two. I am very conscious about what I’m putting into my body, but I try not to be too restricting or extreme.

That said, finding recipes that I like is actually quite a challenge! Sometimes they’re not “healthy” enough for me, and other times it’s too extreme. (Who has time to ground their own almonds for almond flour anyway??) What typically works best for me is combining a couple recipes and then adding my own twist. Sometimes it turns out well, and other times it doesn’t. Live and learn! 

These blueberry lemon muffins are an excellent example of a combination that turned out GREAT. Whatever your view of healthy may be, you’re going to like these. 

    How cute are these little cupcake toppers? Perfect for celebrating an engagement! Target never fails me…  I had white flour on hand so I decided to use that. I substituted the sugar that one recipe called for with honey. I prefer almond milk over regular milk and made that adjustment as well. I also added Greek yogurt for moisture, coconut oil instead of butter and fresh blueberries instead of frozen. Like I said, these turned out great! The recipe made 24 muffins and between 5 of us, they were gone in TWO DAYS. Now if that doesn’t prove they were delicious and you need to make/save this recipe… I don’t know what will!
