Friday Favorites 

Not only is it Friday, it’s a holiday weekend… the best kind of weekend! The 4th of July is actually one of my favorite holidays (which is surprising because no gifts are involved). I love the bbqs, getting together with family and friends, parades, fireworks, etc. It’s an amazing thing to celebrate our freedom! 

That said, holidays and weekends can be a tough combo when it comes to staying on track with your goals. My suggestion is to find a good, clean recipe to take to the BBQ that you are going to, so there will be a healthy choice in the midst of the chips, pop, desserts…. you know how it goes! People will secretly love you for bringing something nutritious. Even if they give you a hard time. Believe me- been there, done that! 

Here are 5 recipes to choose from for your holiday weekend. 

1. Blueberry caprese salad

I am a huge fan of caprese salad in the summer and the idea of adding a little extra sweetness with blueberries sounds so good to me! Eat it as a salad or try it on top of crunchy bread for a blueberry bruschetta. 

2. Fruit infused water 

Whether you make a big pitcher of it, or serve it in individual mason jars (with cute festive straws!), you can use this as a refreshing, healthy alternative to pop. Use red and blue fruits such as strawberries, watermelon, raspberries, blackberries, etc. to add a natural sweetener to your water. This website gives you lots of good combinations to try if you need some ideas to get you started!

3. Quinoa with blue cheese and blueberries. 

Red quinoa, (white) blue cheese and blueberries are the main ingredients in this recipe. Yum! 

4. Fruit and yogurt pops

Cool off with these 4th of July popsicles made with fruit and Greek yogurt. 

5. No bake strawberry cheesecake

Last, but not least… dessert! “No bake.” Those two words are key when making a dessert for a hot day. Nobody wants to have to use their oven if they can avoid it! This cheesecake is high in protein and low in sugr- perfect for a summer treat!
