Do you ever just wish you could throw a bunch of ingredients in a pot and your dinner would just magically appear? If the answer is yes (and if it’s not then who are you and how do you have so much free time), then you are going to really, really like this post.
Since I am no longer funemployed and traveling the world, I need all the time saving hacks I can get. That is why I have come to love my crock pot. It’s quick, it’s easy, it makes enough for 2-3 meals, and it can be healthy… but that last one is up to you!
I have compiled my top five crockpot dinner recipes. They are all tried and true and I hope you enjoy them as much as me!
Chicken Pineapple Tacos – minimal ingredients, but I also top with fresh cilantro and plain Greek yogurt.
Buffalo Chicken Bowls – buff chick is on my regular dinner rotation and it doesn’t get easier than this! I substitute crumbled blue cheese for the ranch.
Pulled Pork – eat it with BBQ sauce, on a bun with coleslaw, or add to a Chipotle-inspired burrito bowl.
Turkey Chili – top with tortilla chips, diced avocado and/or cheese (my new favorite cheese for chili is goat cheese… so creamy!).
Quinoa Enchilada – add 2 lbs. chicken for a non-vegan option.
